Gluten-Free Vegan Pizza Lunch with Veggie Soup

Pizza

  • 1 pie crust from whole foods market – Nature’s Highlights Brown Rice Pizza Crust (it’s Gluten-Free)
  • 4 tablespoons  of Pizza sauce from whole foods market, no sugar added, gluten-free OR
  • Organic PizzaSauce, http://organicvillefoods.com/category/products/pizza-sauce/
  • 1/4 bag of Daiya cheese, http://www.daiyafoods.com/products/mozza.asp
  • 2 finely chopped small organics tomatoes or any other topping desired
  • 1/4 chopped organic red onion
  • or 1/2 can (14 oz. can) S & W Stewed Italian Tomatoes.  Drain & cut into pieces

Preheat oven to 500 then lower to 425 degrees, Thaw pizza crust thoroughly ahead of time, ladle pizza sauce onto crust, place tomatoes onto crust, sprinkle Daiya “cheese” onto pizza, place into oven for 5 minutes.  Take out, let sit for 5 minutes, slice and enjoy!  Serves 4 people

Vegetable Soup
  • 1/2 container Vegetable Broth, Organic Imagine Low Sodium, http://www.imaginefoods.com/content/organic-low-sodium-vegetable-broth
  • 1/2 cabbage, cut into strips
  • 3 carrots
  • 1/2 stalk broccoli, chopped, keep & peel the stem cut into pieces
  • 1/8 red onion, chopped
  • 1/2 sweet potato, peel skin, 1/2 dice into small pieces
  • 1 cup Spring Water
  • dash of sea salt (optional)
Start to heat up vegetable broth & water, cut all veggies, sweet potatoes, onion to desired size place all in to med – large pot, once liquid boils lower heat to low and simmer for 15 minutes, check veggie for firmness, you want them slightly firm to keep nutrition more and to not be too mushy.  Ladle into bowls and enjoy.  Serves 4-6 or can feed 2 for 2 days of delicious leftovers!
